- 1 pound large shrimp, peeled and deveined
- 1 bunch asparagus, trimmed
- 3 tablespoons olive oil
- 4 cloves garlic, minced
- Juice of 1 lemon
- Zest of 1 lemon
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Heat 2 tablespoons of olive oil in a large skillet over medium-high heat.
- Add shrimp and cook until pink, about 3-4 minutes per side. Remove and set aside.
- In the same skillet, add remaining olive oil and garlic; sauté for 30 seconds.
- Add asparagus and cook until tender, about 5-7 minutes.
- Return shrimp to skillet, add lemon juice, lemon zest, salt, and pepper; cook for an additional 2 minutes.
- Garnish with fresh parsley and serve immediately.
