- 2 lbs beef chuck, cut into chunks
- 2 tablespoons olive oil
- 1 large onion, chopped
- 3 carrots, sliced
- 3 celery stalks, sliced
- 4 garlic cloves, minced
- 4 cups beef broth
- 1 cup red wine (optional)
- 2 potatoes, cubed
- 2 teaspoons thyme
- 2 bay leaves
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot or cauldron over medium-high heat.
- Add beef chunks and brown on all sides, about 5 minutes.
- Stir in onions, carrots, celery, and garlic; cook until vegetables are softened.
- Pour in beef broth and red wine; add potatoes, thyme, bay leaves, salt, and pepper.
- Bring to a boil, then reduce heat to low and simmer for 2 hours, stirring occasionally.
- Remove bay leaves before serving and ladle into bowls for a spooky presentation.
Notes
- For a thicker stew, mash some potatoes directly into the broth.
- Use a slow cooker for easier preparation: cook on low for 6-8 hours.
