- 1 pound ground beef or pork
- 1 small onion, finely chopped
- 1/2 cup breadcrumbs
- 1/4 cup milk
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 1 tablespoon fresh parsley, chopped
- 2 large potatoes, diced
- 2 carrots, sliced
- 4 cups beef or chicken broth
- 1 cup heavy cream
- 2 tablespoons butter
- Fresh dill for garnish
Instructions
- Mix ground beef, onion, breadcrumbs, milk, salt, pepper, and parsley in a bowl. Form into small meatballs.
- In a large pot, cook meatballs until browned. Remove and set aside.
- In the same pot, add butter and sauté potatoes and carrots until tender.
- Pour in broth and bring to a simmer. Add cooked meatballs back into the pot.
- Stir in heavy cream and cook for another 5 minutes. Garnish with fresh dill before serving.
Notes
For a healthier option, substitute heavy cream with Greek yogurt or coconut milk. Adjust seasoning to taste.
