Ingredients

  • 1 pound ground beef or pork
  • 1 small onion, finely chopped
  • 1/2 cup breadcrumbs
  • 1/4 cup milk
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 tablespoon fresh parsley, chopped
  • 2 large potatoes, diced
  • 2 carrots, sliced
  • 4 cups beef or chicken broth
  • 1 cup heavy cream
  • 2 tablespoons butter
  • Fresh dill for garnish

Instructions

  1. Mix ground beef, onion, breadcrumbs, milk, salt, pepper, and parsley in a bowl. Form into small meatballs.
  2. In a large pot, cook meatballs until browned. Remove and set aside.
  3. In the same pot, add butter and sauté potatoes and carrots until tender.
  4. Pour in broth and bring to a simmer. Add cooked meatballs back into the pot.
  5. Stir in heavy cream and cook for another 5 minutes. Garnish with fresh dill before serving.

Notes

For a healthier option, substitute heavy cream with Greek yogurt or coconut milk. Adjust seasoning to taste.
