- 8 oz spaghetti or your favorite pasta
- 1 cup cherry tomatoes, halved
- 1 cup fresh spinach
- 1 bell pepper, sliced
- 1/2 cup crumbled feta cheese
- 2 tbsp olive oil
- 2 cloves garlic, minced
- 1 tbsp balsamic vinegar
- Fresh basil, for garnish
Instructions
- Preheat oven to 400°F (200°C). Place feta in a baking dish and bake for 15 minutes until golden and crispy.
- Cook pasta according to package instructions. Drain and set aside.
- In a large skillet, heat olive oil over medium heat. Add garlic and sauté until fragrant.
- Add cherry tomatoes and bell peppers; cook for 5 minutes until slightly softened.
- Stir in spinach, balsamic vinegar, and cooked pasta. Toss to combine.
- Top the pasta with baked feta, garnish with basil, and serve immediately.
Notes
- You can substitute feta with vegan cheese for a dairy-free version.
- Add chili flakes for some heat.
- Use gluten-free pasta if desired.
