  • 2 1/2 cups all-purpose flour
  • 1 teaspoon salt
  • 1 teaspoon sugar
  • 1 cup unsalted butter, cold and cubed
  • 4-6 tablespoons ice water
  • 6 cups thinly sliced tart apples (Granny Smith or Fuji)
  • 3/4 cup sugar
  • 2 teaspoons ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1 tablespoon lemon juice

Instructions

  1. Prepare the crust: Mix flour, salt, and sugar. Cut in cold butter until crumbly. Add ice water until dough forms. Chill for 1 hour.
  2. Preheat oven to 425°F (220°C).
  3. Prepare filling: Toss sliced apples with sugar, cinnamon, nutmeg, and lemon juice.
  4. Roll out half of the dough and fit into a pie dish. Fill with apple mixture.
  5. Roll out the remaining dough and cover the pie. Trim and crimp edges.
  6. Cut slits in top crust for steam to escape. Bake for 45-50 minutes until golden.
