- 2 large sweet potatoes
- 1/2 cup crumbled feta cheese
- 2 tablespoons honey

Instructions
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
- Slice sweet potatoes into 1/4-inch thick rounds.
- Brush the slices with olive oil and season with salt and pepper.
- Arrange on baking sheet and roast for 20-25 minutes until edges are crispy.
- Remove from oven, top with feta cheese, and drizzle with honey.
- Garnish with fresh herbs before serving.
Notes
For a vegan version, use plant-based feta and honey substitutes. Serve warm or at room temperature as a light snack or appetizer.
