Instructions
- Preheat oven to 325°F (160°C). Mix graham cracker crumbs with melted butter and press into the bottom of a springform pan.
- Beat cream cheese and sugar until smooth, then add eggs one at a time. Mix in sour cream, honey, and vanilla.
- Pour mixture over crust and bake for 50-60 minutes until set. Cool completely.
- Top with chopped pistachios and drizzle with honey. Optional: sprinkle with crushed phyllo dough for extra crunch.
- Refrigerate for at least 4 hours before serving.
