Ingredients

  • 4 cups Chex cereal (rice or corn)
  • 1 cup toffee bits or chopped toffee candies
  • 1/2 cup unsalted butter
  • 1 cup brown sugar
  • 1/4 cup light corn syrup
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking soda

Instructions

  1. Preheat oven to 250°F (120°C). Line a large baking sheet with parchment paper.
  2. In a medium saucepan, melt butter over medium heat. Stir in brown sugar, corn syrup, and vanilla extract. Bring to a boil, stirring constantly, then reduce heat and simmer for 4-5 minutes.
  3. Remove from heat and stir in baking soda.
  4. In a large mixing bowl, combine cereal and toffee bits. Pour hot caramel mixture over cereal and toss to coat evenly.
  5. Spread the mixture onto the prepared baking sheet in an even layer. Bake for 45 minutes, stirring every 15 minutes.
  6. Remove from oven and let cool completely before breaking into pieces. Store in an airtight container.
