Ingredients

  • 1 pound beef sirloin or flank steak, sliced into strips
  • 1 large bell pepper, sliced
  • 1 large onion, sliced
  • 3 cloves garlic, minced
  • 1/2 cup soy sauce
  • 1/4 cup beef broth
  • 2 tablespoons brown sugar
  • 1 tablespoon cornstarch (optional, for thickening)
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a skillet over medium-high heat. Sear the beef strips for 2-3 minutes until browned. Transfer to the slow cooker.
  2. Add sliced peppers and onions to the skillet and sauté for 2 minutes. Transfer to the slow cooker.
  3. In a bowl, whisk together soy sauce, beef broth, brown sugar, and minced garlic. Pour over the ingredients in the slow cooker.
  4. Cover and cook on low for 6-8 hours or on high for 3-4 hours until the beef is tender.
