- 1 pound beef sirloin or flank steak, sliced into strips
- 1 large bell pepper, sliced
- 1 large onion, sliced
- 3 cloves garlic, minced
- 1/2 cup soy sauce
- 1/4 cup beef broth
- 2 tablespoons brown sugar
- 1 tablespoon cornstarch (optional, for thickening)
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions
- Heat olive oil in a skillet over medium-high heat. Sear the beef strips for 2-3 minutes until browned. Transfer to the slow cooker.
- Add sliced peppers and onions to the skillet and sauté for 2 minutes. Transfer to the slow cooker.
- In a bowl, whisk together soy sauce, beef broth, brown sugar, and minced garlic. Pour over the ingredients in the slow cooker.
- Cover and cook on low for 6-8 hours or on high for 3-4 hours until the beef is tender.
- (Optional) Mix cornstarch with a little water and stir into the slow cooker. Cook on high for 10 minutes to thicken the sauce.
- Serve hot over rice or noodles.
Notes
- Use flank or sirloin steak for best results.
- You can add other vegetables like mushrooms or snap peas.
- The sauce can be thickened for a richer texture.
