- 1.5 lbs beef stew meat, cubed
- 1 can coconut milk (13.5 oz)
- 1 onion, chopped

- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
- Heat olive oil in a skillet over medium heat, brown the beef cubes until seared.
- Transfer beef to the slow cooker, add chopped onion and minced garlic.
- Pour in coconut milk, add curry powder, turmeric, cumin, salt, and pepper.
- Cook on low for 6-8 hours until beef is tender.
- Garnish with fresh cilantro before serving with rice or noodles.

- You can add vegetables like bell peppers or spinach for extra nutrition.
- If the curry is too thick, stir in a little water or broth.
