- 4 cups chicken or vegetable broth
- 200g ramen noodles
- 4 soft-boiled eggs
- 1 cup fresh greens (spinach, bok choy)
- 8 dumplings (store-bought or homemade)
- 2 tbsp soy sauce
- 1 tbsp sesame oil
- Green onions and sesame seeds for garnish
Instructions
- Bring the broth to a boil in a large pot, then add soy sauce and sesame oil.
- Add ramen noodles and cook until tender, about 3-4 minutes.
- While noodles cook, prepare soft-boiled eggs (boil for 6-7 minutes, then peel).
- Add dumplings and greens to the broth, simmer until greens are wilted and dumplings are heated through.
- Divide noodles into bowls, top with halved eggs, greens, and dumplings.
- Garnish with sliced green onions and sesame seeds before serving.
Notes
- You can customize with different greens or add chili flakes for spice.
- For vegetarian version, use vegetable broth and vegetarian dumplings.
