Ingredients

  • 1 lb ground beef
  • 1 cup shredded cheddar cheese
  • 8 small flour tortillas
  • 1/2 cup diced onions
  • 1/2 cup diced bell peppers
  • 1 tablespoon taco seasoning
  • Salt and pepper to taste
  • Olive oil for cooking

Instructions

  1. Heat a skillet over medium heat and cook ground beef until browned. Add diced onions, bell peppers, taco seasoning, salt, and pepper. Cook until vegetables are tender.
  2. Remove the beef mixture and set aside. Wipe skillet clean.
  3. Place a tortilla in the skillet, sprinkle with cheese, add a scoop of beef mixture, then top with more cheese and another tortilla.
  4. Cook until the bottom is golden, then flip and cook the other side until crispy and cheese melts.
  5. Slice into wedges and serve with salsa and sour cream.

Notes

  • For extra flavor, add diced jalapenos or avocado slices.
