- 1 lb ground beef
- 1 cup shredded cheddar cheese
- 8 small flour tortillas
- 1/2 cup diced onions
- 1/2 cup diced bell peppers
- 1 tablespoon taco seasoning
- Salt and pepper to taste
- Olive oil for cooking
Instructions
- Heat a skillet over medium heat and cook ground beef until browned. Add diced onions, bell peppers, taco seasoning, salt, and pepper. Cook until vegetables are tender.
- Remove the beef mixture and set aside. Wipe skillet clean.
- Place a tortilla in the skillet, sprinkle with cheese, add a scoop of beef mixture, then top with more cheese and another tortilla.
- Cook until the bottom is golden, then flip and cook the other side until crispy and cheese melts.
- Slice into wedges and serve with salsa and sour cream.
Notes
- For extra flavor, add diced jalapenos or avocado slices.
- Use a non-stick skillet for easier flipping.
