- 2 cups diced apples

- 1 tablespoon lemon juice
- 1 sheet refrigerated pie crust
- 1 egg, beaten
- 1 tablespoon coarse sugar (optional)
Instructions
- Preheat oven to 375°F (190°C). Grease a muffin tin.
- In a bowl, toss diced apples with sugar, cinnamon, nutmeg, and lemon juice.
- Cut pie crust into circles slightly larger than muffin cups.
- Press crust circles into each muffin cup.
- Spoon apple filling into crust-lined cups.
- Brush crust edges with beaten egg and sprinkle with coarse sugar.
- Bake for 20-25 minutes until golden brown.
- Allow to cool slightly before removing from the tin.

- Use tart apples like Granny Smith for best flavor.
- Can be served warm or cooled.
- Great with vanilla ice cream or whipped cream.
