Ingredients

  • 2 cups diced apples
  • 1/4 cup granulated sugar
  • 1 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1 tablespoon lemon juice
  • 1 sheet refrigerated pie crust
  • 1 egg, beaten
  • 1 tablespoon coarse sugar (optional)

Instructions

  1. Preheat oven to 375°F (190°C). Grease a muffin tin.
  2. In a bowl, toss diced apples with sugar, cinnamon, nutmeg, and lemon juice.
  3. Cut pie crust into circles slightly larger than muffin cups.
  4. Press crust circles into each muffin cup.
  5. Spoon apple filling into crust-lined cups.
  6. Brush crust edges with beaten egg and sprinkle with coarse sugar.
  7. Bake for 20-25 minutes until golden brown.
  8. Allow to cool slightly before removing from the tin.
