Ingredients

- 2 lbs beef stew meat, cubed
- 4 carrots, sliced
- 3 potatoes, diced
- 2 celery stalks, sliced
- 1 onion, chopped
- 3 cloves garlic, minced
- 4 cups beef broth
- 2 tbsp tomato paste
- 1 tsp thyme
- 1 tsp rosemary
- Salt and pepper to taste
Instructions
- Place all ingredients into the slow cooker.
- Cook on low for 8 hours or high for 4 hours until beef and vegetables are tender.
- Adjust seasoning as needed before serving.
Notes
For richer flavor, sear beef cubes before adding to the slow cooker. You can also add peas or green beans in the last 30 minutes for extra freshness.
