Ingredients

  • 20 large pasta shells
  • 2 cups ricotta cheese
  • 1 cup cooked spinach, chopped
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 teaspoon dried Italian herbs
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C). Cook pasta shells according to package instructions, then drain and set aside.
  2. In a mixing bowl, combine ricotta, cooked spinach, mozzarella, Parmesan, garlic, olive oil, Italian herbs, salt, and pepper.
  3. Stuff each shell with the ricotta mixture and place in a baking dish.
  4. Top with remaining mozzarella and Parmesan cheeses.
  5. Cover with foil and bake for 25 minutes, then remove foil and bake an additional 5 minutes until golden.

Notes

  • You can substitute fresh spinach with frozen and thawed spinach. Adjust cooking time accordingly.
