- 4 large sweet potatoes
- 1 cup fresh cranberries
- 2 apples, diced
- 2 tablespoons honey
- 1 teaspoon cinnamon
- 1/4 cup chopped walnuts (optional)
- Fresh mint for garnish
Instructions
- Preheat the oven to 400°F (200°C). Pierce sweet potatoes with a fork and bake for 45-50 minutes until tender.
- Allow sweet potatoes to cool slightly, then halve and scoop out most of the flesh into a bowl.
- Mix the scooped-out flesh with cranberries, diced apples, honey, and cinnamon.
- Spoon the mixture back into the sweet potato shells.
- Return to the oven and bake for an additional 15 minutes. Garnish with chopped walnuts and mint before serving.
Notes
- You can replace cranberries with raisins or dried cherries for different flavors.
- For added crunch, sprinkle with chopped nuts before the second bake.
