  • 4 large sweet potatoes
  • 1 cup fresh cranberries
  • 2 apples, diced
  • 2 tablespoons honey
  • 1 teaspoon cinnamon
  • 1/4 cup chopped walnuts (optional)

Instructions

  1. Preheat the oven to 400°F (200°C). Pierce sweet potatoes with a fork and bake for 45-50 minutes until tender.
  2. Allow sweet potatoes to cool slightly, then halve and scoop out most of the flesh into a bowl.
  3. Mix the scooped-out flesh with cranberries, diced apples, honey, and cinnamon.
  4. Spoon the mixture back into the sweet potato shells.
  5. Return to the oven and bake for an additional 15 minutes. Garnish with chopped walnuts and mint before serving.
