Ingredients
Scale
- 4 large Honey Garlic Sausage links (or your favorite sweet sausage)
- 2 large sweet potatoes, peeled and diced
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 2 tablespoons honey
- 1 teaspoon smoked paprika
- Salt and pepper, to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Start by peeling and dicing the sweet potatoes into evenly-sized cubes. Mince the garlic and set aside.
- In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the Honey Garlic Sausage links and cook until browned on all sides, about 8-10 minutes. Remove and set aside.
- Add the remaining tablespoon of olive oil to the skillet. Toss in the diced sweet potatoes, smoked paprika, salt, and pepper. Sauté for 10-12 minutes until golden and tender. Add garlic during the last 2 minutes of cooking.
- While the sweet potatoes are roasting, prepare the honey garlic sauce by mixing honey, minced garlic, and a pinch of salt. Pour this over the sausages and sweet potatoes, stirring to coat. Simmer for 2-3 minutes to meld flavors.
- Slice the cooked sausages into bite-sized pieces. Return to the skillet and toss everything to combine. Garnish with chopped parsley and serve hot.
Notes
- Ensure sweet potatoes are diced evenly for uniform cooking.
- You can substitute the sausage with chicken or turkey sausage for a leaner option.
- Vegetarian version: replace with veggie sausages, tofu, or tempeh and cook until crispy before combining.
- For extra flavor, top with Greek yogurt or feta cheese.
