  • 2 large sweet potatoes, peeled and diced

  • Salt and pepper, to taste

Instructions

  1. Start by peeling and dicing the sweet potatoes into evenly-sized cubes. Mince the garlic and set aside.
  2. In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the Honey Garlic Sausage links and cook until browned on all sides, about 8-10 minutes. Remove and set aside.
  3. Add the remaining tablespoon of olive oil to the skillet. Toss in the diced sweet potatoes, smoked paprika, salt, and pepper. Sauté for 10-12 minutes until golden and tender. Add garlic during the last 2 minutes of cooking.
  4. While the sweet potatoes are roasting, prepare the honey garlic sauce by mixing honey, minced garlic, and a pinch of salt. Pour this over the sausages and sweet potatoes, stirring to coat. Simmer for 2-3 minutes to meld flavors.
  5. Slice the cooked sausages into bite-sized pieces. Return to the skillet and toss everything to combine. Garnish with chopped parsley and serve hot.
