Instructions
- Preheat your oven to 400°F (200°C). Flatten chicken breasts uniformly using a meat mallet or rolling pin, then season with salt and pepper.
- In a shallow bowl, beat the eggs. In another dish, combine bread crumbs with grated Parmesan cheese. Dip each chicken breast into the egg mixture, then coat thoroughly with the breadcrumb mixture, pressing gently to adhere.
- Heat olive oil in a large oven-proof skillet over medium-high heat. Sear the breaded chicken until golden brown on both sides, about 3-4 minutes per side.
- Transfer the skillet to the preheated oven and bake for 20-25 minutes until chicken reaches an internal temperature of 165°F.
- Remove from oven, spoon marinara sauce over each piece, then sprinkle with shredded mozzarella cheese.
- Return to oven and bake for an additional 5-7 minutes until cheese is melted and bubbly.
- Garnish with chopped basil or parsley, then serve hot over pasta, zucchini noodles, or your favorite side.
