  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 cup canned pumpkin puree
  • 1/4 cup fresh orange juice
  • Zest of 1 orange
  • For Streusel: 1/2 cup brown sugar, 1/3 cup all-purpose flour, 1/4 cup cold butter, 1 teaspoon ground cinnamon
  • For Orange Glaze: 1 cup powdered sugar, 2-3 tablespoons orange juice

Instructions

  1. Preheat oven to 350°F (175°C). Grease a loaf pan.
  2. In a bowl, whisk together flour, baking soda, salt, cinnamon, and nutmeg.
  3. In a large bowl, cream butter and sugar until light and fluffy. Beat in eggs one at a time.
  4. Mix in pumpkin puree, orange juice, and orange zest.
  5. Add dry ingredients gradually, mixing until just combined.
  6. Prepare streusel by combining brown sugar, flour, cinnamon, and cold butter; cut in until crumbly.
  7. Pour batter into the loaf pan, sprinkle streusel evenly on top.
  8. Bake for 55-60 minutes or until a toothpick inserted into the center comes out clean.
  9. Allow to cool slightly, then drizzle with orange glaze.

Notes

Store in an airtight container for 2-3 days. For a more intense orange flavor, add extra orange zest or juice.
