- 2 pounds beef chuck, cut into cubes
- 2 tablespoons olive oil
- 1 large onion, chopped
- 3 carrots, sliced
- 3 potatoes, diced
- 3 cloves garlic, minced
- 4 cups beef broth
- 1 teaspoon thyme
- 1 teaspoon rosemary
- 1 bay leaf
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat.
- Brown beef cubes until seared on all sides, then set aside.
- In the same pot, sauté onions and garlic until fragrant.
- Add carrots, potatoes, thyme, rosemary, salt, and pepper; cook for 5 minutes.
- Return beef to the pot, pour in beef broth, and add bay leaf.
- Bring to a boil, then reduce heat and simmer for 1.5 to 2 hours until beef is tender.
- Remove bay leaf, taste, and adjust seasoning before serving in a cauldron or deep bowl.
Notes
- For a richer flavor, add a splash of red wine or Worcestershire sauce.
- Serve with crusty bread or crusty rolls.
