- 2 large chicken breasts, sliced
- 3 bell peppers (red, green, yellow), sliced
- 1 large onion, sliced
- 2 tbsp olive oil
- 1 tbsp chili powder
- 1 tsp paprika
- 1 tsp cumin
- 1/2 tsp garlic powder
- Salt and pepper to taste
- Juice of 1 lime
- Fresh cilantro for garnish
Instructions
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
- In a small bowl, mix chili powder, paprika, cumin, garlic powder, salt, and pepper.
- In a large bowl, toss chicken slices with olive oil and spice mixture until coated.
- Spread chicken, peppers, and onions evenly on the prepared baking sheet.
- Bake for 20-25 minutes until chicken is cooked through and vegetables are roasted.
- Squeeze lime juice over the fajitas, garnish with cilantro, and serve with tortillas.
Notes
- You can add sliced jalapenos for extra heat.
- Serve with warm tortillas and your favorite toppings like sour cream or shredded cheese.
