Ingredients

  • 1 cup unsalted butter, softened
  • 1 1/2 cups sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon cream of tartar
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup finely chopped dried apples

Instructions

  1. Preheat oven to 375°F (190°C). Line baking sheets with parchment paper.
  2. In a large bowl, cream together butter and sugar until light and fluffy.
  3. Beat in eggs one at a time, then stir in vanilla.
  4. In another bowl, whisk together flour, cream of tartar, baking soda, and salt.
  5. Gradually add dry ingredients to wet ingredients, mixing well.
  6. Fold in chopped dried apples.
  7. In a small bowl, combine sugar and cinnamon for coating.
  8. Form dough into tablespoon-sized balls, then roll in cinnamon-sugar mixture.
  9. Place on prepared baking sheets and flatten slightly.
  10. Bake for 10-12 minutes or until edges are golden.
  11. Cool on wire racks before serving.

Notes

  • Using dried apples provides a concentrated apple flavor – fresh may turn soggy.
  • For softer cookies, remove from oven at 10 minutes.
