- 1 cup unsalted butter, softened
- 1 1/2 cups sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
- 1 teaspoon cream of tartar
- 1/2 teaspoon baking soda

- 1 cup finely chopped dried apples
Instructions
- Preheat oven to 375°F (190°C). Line baking sheets with parchment paper.
- In a large bowl, cream together butter and sugar until light and fluffy.
- Beat in eggs one at a time, then stir in vanilla.
- In another bowl, whisk together flour, cream of tartar, baking soda, and salt.
- Gradually add dry ingredients to wet ingredients, mixing well.
- Fold in chopped dried apples.
- In a small bowl, combine sugar and cinnamon for coating.
- Form dough into tablespoon-sized balls, then roll in cinnamon-sugar mixture.
- Place on prepared baking sheets and flatten slightly.
- Bake for 10-12 minutes or until edges are golden.
- Cool on wire racks before serving.
Notes
- Using dried apples provides a concentrated apple flavor – fresh may turn soggy.
- For softer cookies, remove from oven at 10 minutes.
