Ingredients
Scale
- 4 boneless, skinless chicken breasts or thighs
- 3 bell peppers (red, yellow, green), sliced
- 1 large onion, sliced
- 2 tbsp olive oil
- 2 tbsp fajita seasoning (or homemade spice blend)
- Juice of 1 lime
- Salt and pepper to taste
- Corn or flour tortillas, for serving
- Optional toppings: sour cream, shredded cheese, fresh cilantro, sliced jalapeños
Instructions
- Preheat your oven to 400°F (200°C). In a small bowl, mix fajita seasoning with olive oil and lime juice to create a marinade. Coat the chicken evenly with the marinade. Toss sliced peppers and onions with olive oil, salt, and pepper.
- Arrange the marinated chicken on one side of a large sheet pan. Spread peppers and onions around the chicken in a single layer for even roasting.
- Bake for 20-25 minutes, until chicken is cooked through and vegetables are tender. For extra smoky flavor, broil for an additional 2-3 minutes.
- Let the chicken rest slightly, then slice if desired. Serve hot on warm tortillas with favorite toppings and fresh lime wedges.
