- 2 tablespoons olive oil
- 1 small onion, chopped
- 3 cloves garlic, minced
- 1 (14.5 oz) can diced tomatoes
- 4 cups vegetable broth
- 1 package (9 oz) tortellini (cheese or spinach)
- 1 teaspoon dried basil
- Salt and pepper to taste
- Fresh basil or parsley for garnish
Instructions
- Heat olive oil in a large pot over medium heat.
- Sauté onion and garlic until translucent.
- Add diced tomatoes, broth, basil, salt, and pepper. Bring to a boil.
- Reduce heat and add tortellini. Cook until tortellini is tender, about 8 minutes.
- Print with fresh herbs and serve hot.
Notes
- You can use fresh or frozen tortellini.
- Adjust seasoning to taste and add red pepper flakes for spice.
