- 1 cup pumpkin puree

Instructions
- Preheat oven to 375°F (190°C) and line a muffin tin with paper liners.
- In a large bowl, mix pumpkin puree, cottage cheese, sugar, and oil until well combined.
- In another bowl, whisk together flour, baking powder, cinnamon, nutmeg, and salt.
- Gradually add dry ingredients to wet ingredients, stirring until just combined.
- Spoon batter into muffin cups, filling about 3/4 full.
- Bake for 20-25 minutes until the tops are golden and a toothpick inserted comes out clean.
- Allow muffins to cool slightly before serving.
Notes
- For a sweeter version, add a drizzle of honey on top after baking.
- You can substitute whole wheat flour for a healthier option.
