  • 1 cup chopped apples (peeled and cored)

Instructions

  1. Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. In a bowl, cream together butter and sugar until fluffy.
  3. Add egg and vanilla, mix well.
  4. In a separate bowl, whisk flour, baking powder, cinnamon, and salt.
  5. Gradually add dry ingredients to wet, mixing until just combined.
  6. Fold in chopped apples.
  7. Mix together 1/3 cup sugar and 2 teaspoons cinnamon in a small bowl.
  8. Shape dough into 1-inch balls, roll in cinnamon-sugar mixture, and place on prepared baking sheet.
  9. Bake for 10-12 minutes until edges are golden.
  10. Cool on wire racks before serving.
