Instructions
- Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
- In a bowl, cream together butter and sugar until fluffy.
- Add egg and vanilla, mix well.
- In a separate bowl, whisk flour, baking powder, cinnamon, and salt.
- Gradually add dry ingredients to wet, mixing until just combined.
- Fold in chopped apples.
- Mix together 1/3 cup sugar and 2 teaspoons cinnamon in a small bowl.
- Shape dough into 1-inch balls, roll in cinnamon-sugar mixture, and place on prepared baking sheet.
- Bake for 10-12 minutes until edges are golden.
- Cool on wire racks before serving.
Notes
- Chop apples finely for even distribution in cookies.
- For softer cookies, bake for 11-12 minutes.
- Store in an airtight container for up to 3 days.
