Instructions

  1. Preheat oven to 375°F (190°C). Line a muffin tin with paper liners.
  2. Mix flour, baking powder, baking soda, salt, and cinnamon in a bowl.
  3. In another bowl, whisk together sugar, oil, eggs, and vanilla. Add sour cream and mix well.
  4. Gradually add dry ingredients to wet ingredients, stirring gently. Fold in diced apples.
  5. Spoon batter into muffin cups, filling 2/3 full.
  6. Combine topping ingredients and sprinkle over muffins.
  7. Bake for 20-25 minutes or until a toothpick inserted in the center comes out clean.
  8. Allow to cool slightly before serving.
