- 1 1/2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon ground cinnamon
- 1/2 cup granulated sugar
- 1/3 cup vegetable oil
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup sour cream
- 1 cup diced fresh apple
- for topping: 2 tablespoons brown sugar, 1 teaspoon cinnamon, 1 tablespoon melted butter
Instructions
- Preheat oven to 375°F (190°C). Line a muffin tin with paper liners.
- Mix flour, baking powder, baking soda, salt, and cinnamon in a bowl.
- In another bowl, whisk together sugar, oil, eggs, and vanilla. Add sour cream and mix well.
- Gradually add dry ingredients to wet ingredients, stirring gently. Fold in diced apples.
- Spoon batter into muffin cups, filling 2/3 full.
- Combine topping ingredients and sprinkle over muffins.
- Bake for 20-25 minutes or until a toothpick inserted in the center comes out clean.
- Allow to cool slightly before serving.

- Can substitute sour cream with Greek yogurt for a healthier option.
