Instructions
- Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
- In a bowl, whisk together flour, baking soda, salt, cinnamon, and nutmeg.
- In a separate large bowl, cream together butter and brown sugar until light and fluffy.
- Add egg, apple cider, and vanilla; beat until combined.
- Gradually add dry ingredients to wet mixture, stirring just until incorporated.
- Drop spoonfuls of batter onto prepared baking sheets, about 2 inches apart.
- Bake for 12-15 minutes until edges are golden. Cool completely on wire racks.
- For the frosting, beat powdered sugar, butter, and vanilla until smooth. Spread on cooled pies.
- Sandwich two cookies together with frosting and dust with cinnamon sugar.
