Instructions

  1. Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. In a bowl, whisk together flour, baking soda, salt, cinnamon, and nutmeg.
  3. In a separate large bowl, cream together butter and brown sugar until light and fluffy.
  4. Add egg, apple cider, and vanilla; beat until combined.
  5. Gradually add dry ingredients to wet mixture, stirring just until incorporated.
  6. Drop spoonfuls of batter onto prepared baking sheets, about 2 inches apart.
  7. Bake for 12-15 minutes until edges are golden. Cool completely on wire racks.
  8. For the frosting, beat powdered sugar, butter, and vanilla until smooth. Spread on cooled pies.
  9. Sandwich two cookies together with frosting and dust with cinnamon sugar.
