- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1 cup granulated sugar
- 1/2 cup brown sugar
- 1/2 cup vegetable oil
- 3 large eggs
- 2 cups grated carrots
- 1 teaspoon vanilla extract
- 1 cup chopped walnuts
- 8 oz cream cheese, softened
- 1/2 cup butter, softened
- 2 cups powdered sugar
Instructions
- Preheat oven to 350°F (175°C). Grease and line a baking pan.
- Mix dry ingredients: flour, baking soda, salt, cinnamon, nutmeg.
- In a separate bowl, whisk sugars, oil, eggs, and vanilla until smooth.
- Gradually add dry mixture to wet ingredients, then fold in grated carrots and walnuts.
- Pour batter into prepared pan and bake for 25-30 minutes, until golden and a toothpick comes out clean.
- Allow to cool completely before frosting.
- Beat cream cheese and butter until creamy, then add powdered sugar.
- Spread frosting evenly over cooled cake bars and garnish with chopped walnuts.
Notes
- For extra moisture, add a splash of pineapple juice to the batter.
- Chill the bars before serving for neat slices.
