  • 3 large eggs
  • 2 cups grated carrots

  • 8 oz cream cheese, softened
  • 1/2 cup butter, softened
  • 2 cups powdered sugar

Instructions

  1. Preheat oven to 350°F (175°C). Grease and line a baking pan.
  2. Mix dry ingredients: flour, baking soda, salt, cinnamon, nutmeg.
  3. In a separate bowl, whisk sugars, oil, eggs, and vanilla until smooth.
  4. Gradually add dry mixture to wet ingredients, then fold in grated carrots and walnuts.
  5. Pour batter into prepared pan and bake for 25-30 minutes, until golden and a toothpick comes out clean.
  6. Allow to cool completely before frosting.
  7. Beat cream cheese and butter until creamy, then add powdered sugar.
  8. Spread frosting evenly over cooled cake bars and garnish with chopped walnuts.
