- 1 onion, diced
- 3 garlic cloves, minced
- 1 can diced tomatoes (14 oz)
- 2 cans white beans (15 oz each), drained and rinsed
- 2 cups vegetable broth
- 1 teaspoon smoked paprika
- 1 teaspoon dried oregano
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Heat olive oil in a large pot over medium heat. Add diced onion and cook until translucent, about 5 minutes.
- Add minced garlic and cook for another minute.
- Pour in the diced tomatoes and cook for 5 minutes, stirring occasionally.
- Add white beans, vegetable broth, smoked paprika, oregano, salt, and pepper. Bring to a boil.
- Reduce heat and simmer for 20 minutes, allowing flavors to meld.
- Garnish with fresh parsley before serving. Enjoy hot.
