- 4 large bell peppers, any color
- 1 cup ricotta cheese
- 1/2 cup grated Parmesan cheese
- 2 cloves garlic, minced
- 1 tablespoon chopped fresh basil
- Salt and pepper to taste
- Olive oil for drizzling
Instructions
- Preheat oven to 375°F (190°C).
- Cut the tops off the bell peppers and remove seeds and membranes.
- In a bowl, combine ricotta, Parmesan, garlic, basil, salt, and pepper.
- Stuff the peppers with the ricotta mixture and place them in a baking dish.
- Drizzle with olive oil and bake for 25-30 minutes until peppers are tender and cheese is golden.
- Garnish with additional herbs before serving.
Notes
Feel free to add cooked rice, spinach, or other vegetables to the filling for extra flavor and nutrition.
