Ingredients

  • 4 large bell peppers, any color
  • 1 cup ricotta cheese
  • 1/2 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1 tablespoon chopped fresh basil

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove seeds and membranes.
  3. In a bowl, combine ricotta, Parmesan, garlic, basil, salt, and pepper.
  4. Stuff the peppers with the ricotta mixture and place them in a baking dish.
  5. Drizzle with olive oil and bake for 25-30 minutes until peppers are tender and cheese is golden.
  6. Garnish with additional herbs before serving.
