- 1 pound Italian sausage
- 1 onion, chopped
- 3 cloves garlic, minced
- 4 cups chicken broth
- 1 can diced tomatoes (14 oz)
- 1 package (9 oz) refrigerated tortellini
- 1 cup chopped spinach
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Brown the sausage in a skillet over medium heat, then transfer to the crockpot.
- Add chopped onion and garlic to the sausage drippings; cook until translucent. Add to crockpot.
- Pour in chicken broth, diced tomatoes, Italian seasoning, salt, and pepper.
- Cover and cook on low for 4 hours.
- Add tortellini and spinach during the last 30 minutes of cooking.
- Garnish with fresh parsley before serving.

- Feel free to add other vegetables like carrots or celery for extra flavor.
- You can substitute turkey sausage for a leaner option.
