Ingredients

  • 1 lb ground beef
  • 1 onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 4 cups beef broth
  • 1 cup corn kernels
  • 1 cup shredded cheddar cheese
  • 1 cup milk or heavy cream
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • Chopped fresh parsley for garnish

Instructions

  1. Heat olive oil in a large pot over medium heat. Add ground beef and cook until browned. Remove and set aside.
  2. Sauté onions, carrots, and celery in the same pot until tender, about 5 minutes.
  3. Add garlic and cook for 1 minute more.
  4. Return beef to the pot, pour in beef broth, and bring to a boil. Reduce heat and simmer for 20 minutes.
  5. Stir in corn, cheese, and milk, cooking until cheese melts and soup is creamy. Season with salt and pepper.
  6. Serve hot, garnished with chopped parsley.
