- 1 lb ground beef
- 1 onion, chopped
- 2 carrots, diced
- 2 celery stalks, diced
- 3 cloves garlic, minced
- 4 cups beef broth
- 1 cup corn kernels
- 1 cup shredded cheddar cheese
- 1 cup milk or heavy cream
- 2 tbsp olive oil
- Salt and pepper to taste
- Chopped fresh parsley for garnish
Instructions
- Heat olive oil in a large pot over medium heat. Add ground beef and cook until browned. Remove and set aside.
- Sauté onions, carrots, and celery in the same pot until tender, about 5 minutes.
- Add garlic and cook for 1 minute more.
- Return beef to the pot, pour in beef broth, and bring to a boil. Reduce heat and simmer for 20 minutes.
- Stir in corn, cheese, and milk, cooking until cheese melts and soup is creamy. Season with salt and pepper.
- Serve hot, garnished with chopped parsley.
Notes
- You can substitute ground beef with ground chicken or turkey for a lighter version.
- Add a dash of hot sauce for extra spice.
- Best served with crusty bread on the side.
