- 2 tablespoons olive oil
- 1 onion, diced
- 3 garlic cloves, minced
- 2 carrots, sliced
- 2 celery stalks, sliced
- 2 cups cooked shredded chicken
- 4 cups chicken broth
- 1 cup heavy cream
- 1 teaspoon thyme
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat.
- Add diced onion and sauté until translucent.
- Stir in garlic, carrots, and celery, cook for 5 minutes.
- Pour in chicken broth and bring to a boil.
- Add shredded chicken, thyme, salt, and pepper.
- Reduce heat and simmer for 15 minutes.
- Stir in heavy cream and cook for another 5 minutes.
- Adjust seasoning and serve hot.

- Use cooked rotisserie chicken for quick preparation.
- Garnish with fresh herbs or shredded cheese if desired.
