- 1 lb boneless chicken breasts
- 1 tablespoon Cajun seasoning
- 1 tablespoon olive oil
- 1 onion, chopped
- 3 cloves garlic, minced
- 2 carrots, diced
- 2 celery stalks, diced
- 4 cups chicken broth
- 1 cup heavy cream
- 1 tablespoon paprika
- 1 teaspoon cayenne pepper (adjust to taste)
- Salt and pepper to taste
- Fresh parsley, chopped for garnish
Instructions
- Season chicken breasts with Cajun seasoning.
- Heat olive oil in a large pot over medium heat. Add chicken and cook until browned and cooked through. Remove and shred.
- In the same pot, sauté onions, garlic, carrots, and celery until softened.
- Add shredded chicken back to the pot along with chicken broth, paprika, cayenne pepper, salt, and pepper. Bring to a boil, then simmer for 15 minutes.
- Stir in heavy cream and cook for an additional 5 minutes until heated through.
- Garnish with chopped parsley and serve hot.
Notes
- Adjust the cayenne pepper to spice level preference.
- For a lower-fat option, substitute heavy cream with milk or coconut milk.
