Instructions
- Roast or boil the butternut squash until tender, then mash until smooth.
- In a mixing bowl, combine mashed squash, egg, salt, and pepper. Gradually add flour until dough forms.
- Divide dough into portions, roll into logs, and cut into bite-sized gnocchi.
- Cook gnocchi in boiling salted water until they float, then drain.
- In a skillet, heat olive oil and cook sausage slices until browned and cooked through.
- Add cooked gnocchi to the skillet with sausage, toss gently to coat in sauce.
- Garnish with fresh herbs and serve hot.

- Ensure squash is completely mashed for smooth gnocchi dough.
