- 6 slices bacon, chopped
- 1 small onion, diced
- 2 cloves garlic, minced
- 4 cups chicken broth
- 2 cups heavy cream
- 1 package potato gnocchi (approx. 16 oz)

- Fresh parsley for garnish
Instructions
- Cook bacon in a large pot over medium heat until crispy. Remove and set aside.
- In the bacon drippings, sauté diced onion and minced garlic until translucent.
- Add chicken broth and bring to a boil.
- Stir in heavy cream and gnocchi; cook until gnocchi are tender, about 3-4 minutes.
- Reduce heat and add shredded cheddar cheese, stirring until melted and smooth.
- Season with salt and pepper, then top with crispy bacon and chopped herbs before serving.
