- 6 slices bacon, chopped
- 1 large onion, diced
- 3 cloves garlic, minced
- 4 cups chicken broth
- 2 cups whole milk
- 1 cup shredded cheddar cheese
- 1 package (16 oz) potato gnocchi
- 2 tablespoons butter
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- In a large pot, cook bacon until crisp. Remove and set aside.
- In the same pot, sauté onion and garlic in bacon grease until softened.
- Add butter and cook until melted, then pour in chicken broth and milk bringing to a simmer.
- Add gnocchi and cook until tender, about 3-4 minutes.
- Stir in cheddar cheese until melted, then season with salt and pepper.
- Serve hot, garnished with crispy bacon and parsley.
Notes
For a thicker soup, add a splash of heavy cream or blend a portion of the soup. Feel free to add vegetables like spinach or kale for added nutrition.
