- 2 lbs boneless, skinless chicken breasts
- 4 cups chicken broth
- 1 can (14.5 oz) diced tomatoes
- 1 cup marinara sauce
- 1 teaspoon Italian seasoning
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
- 1 cup shredded mozzarella cheese
- Fresh basil leaves for garnish
- Cooked pasta (optional)
Instructions
- Place chicken breasts in the slow cooker. Add diced tomatoes, marinara sauce, chicken broth, Italian seasoning, garlic powder, onion powder, salt, and pepper.
- Cover and cook on low for 6-8 hours or high for 4 hours.
- Remove chicken, shred with two forks, and return to the pot.
- Stir in shredded mozzarella cheese until melted.
- Serve hot, garnished with fresh basil and optional cooked pasta.
Notes
- You can substitute cooked pasta for a more filling soup.
- For a spicier version, add red pepper flakes.
- Use fresh basil for best flavor garnish.
