- 1 lb Italian sausage
- 1 package (9 oz) cheese tortellini
- 4 cups chicken broth
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 cup chopped carrots
- 1 cup chopped celery
- 1 tsp dried thyme
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- In a large pot, cook sausage over medium heat until browned. Remove and set aside.
- In the same pot, sauté onions, carrots, and celery until tender.
- Add garlic and cook for another Minute.
- Pour in chicken broth, add thyme, salt, and pepper. Bring to a boil.
- Add cooked sausage back to the pot and simmer for 10 minutes.
- Stir in tortellini and cook until tender, about 3-5 minutes.
- Serve hot, garnished with fresh parsley.

- You can substitute sausage with turkey or vegetarian options for a different flavor profile.
