- 1 lb Italian sausage
- 1 small onion, diced
- 2 cloves garlic, minced
- 4 cups chicken broth
- 1 (9 oz) package tortellini
- 1 cup chopped spinach
- 1 teaspoon dried thyme
- 1 teaspoon dried basil
- Salt and pepper to taste
- Grated Parmesan cheese for serving
Instructions
- In a large pot, cook sausage over medium heat until browned. Remove excess fat and set aside.
- Sauté diced onion and garlic in the same pot until translucent.
- Add chicken broth, thyme, basil, salt, and pepper. Bring to a boil.
- Stir in tortellini and cook according to package instructions.
- Incorporate cooked sausage and chopped spinach. Simmer for a few minutes until heated through.
- Serve hot topped with grated Parmesan cheese.
Notes
- You can substitute spinach with kale or other leafy greens.
- Add a splash of cream for extra richness if desired.
