Ingredients

  • 2 cups mashed potatoes
  • 1 cup shredded cheddar cheese
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup chopped green onions
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • 1 cup all-purpose flour
  • 2 large eggs
  • 1 cup breadcrumbs
  • Oil for frying

Instructions

  1. In a large bowl, combine mashed potatoes, cheddar cheese, Parmesan cheese, green onions, garlic powder, salt, and pepper.
  2. Shape the mixture into small balls or puffs and set aside.
  3. Place flour, beaten eggs, and breadcrumbs in separate shallow dishes.
  4. Dredge each potato puff in flour, then dip in eggs, and coat with breadcrumbs.
  5. Heat oil in a deep fryer or skillet over medium-high heat.
  6. Fry the puffs until golden brown and crispy, about 3-4 minutes per side.
  7. Drain on paper towels and serve warm with dipping sauce.
