Instructions
- In a large bowl, combine mashed potatoes, cheddar cheese, Parmesan cheese, green onions, garlic powder, salt, and pepper.
- Shape the mixture into small balls or puffs and set aside.
- Place flour, beaten eggs, and breadcrumbs in separate shallow dishes.
- Dredge each potato puff in flour, then dip in eggs, and coat with breadcrumbs.
- Heat oil in a deep fryer or skillet over medium-high heat.
- Fry the puffs until golden brown and crispy, about 3-4 minutes per side.
- Drain on paper towels and serve warm with dipping sauce.
Notes
For a healthier option, bake the puffs at 375°F (190°C) for 20-25 minutes instead of frying. Feel free to add spices or herbs to customize the flavor.
