- 4 large potatoes, thinly sliced
- 2 large onions, sliced
- 2 cups shredded Gruyere or Swiss cheese
- 2 tablespoons olive oil
- 2 tablespoons unsalted butter
- 1 teaspoon fresh thyme
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Preheat oven to 375°F (190°C). Lightly grease a baking dish.
- In a skillet, heat olive oil and butter over medium heat. Add sliced onions, thyme, salt, and pepper. Cook until onions are caramelized, about 15-20 minutes.
- Layer half of the sliced potatoes in the baking dish. Top with half of the caramelized onions and sprinkle with cheese.
- Add remaining potatoes, onions, and cheese layers. Cover with foil.
- Bake for 45 minutes. Remove foil and bake another 10 minutes until bubbling and golden.
- Garnish with fresh parsley before serving.

- Ensure thin potato slices for even cooking.
- You can add a sprinkle of paprika for extra color.
